Trying Dalgona Coffee

Fancy trying something new while you’re stuck at home, self-isolating? Or perhaps you’ve run out of freshly roasted coffee and the instant sitting at the back of the cupboard is looking more and more tempting. Dalgona coffee is an easy to make recipe that transforms instant coffee into something worth drinking.

What is Dalgona coffee?

Dalgona coffee is a whipped coffee foam that tops iced milk delightfully. It takes its name from the South Korean sweet ‘Dalgona’ which is also known as ‘ppopgi’, a toffee candy that looks similar.

The pictures I’ve seen made my mouth water, so I thought I’d give making it a go!

Firstly, it’s worth noting that whisking a small amount of liquid in a milk frothing jug using an electric whisk is a recipe for disaster if you value your clothing. Luckily, I work in a coffee roastery and dress appropriately, so the coffee mixture splattered on my sleeves should wash out.

Next, although the recipe I found suggested adding equal parts sugar, hot water, and instant coffee, I found that I needed more sugar. Even then I struggled to get the mixture to stiffen, but I blame that on my tools, as I didn’t have a mixing bowl and I quickly gave up on the electric whisk.

The mess, effort, and sore wrist was all worth it, however, once the Dalgona coffee began to thicken. It has a sweet, rich, intense flavour reminiscent of coffee flavoured ice cream. Everyone at the roastery tasted it and we all agreed it was delicious!

Recipe

What you need:

  • Instant coffee
  • Boiling hot water
  • Sugar
  • Milk
  • Ice
  • A mixing bowl
  • A cup
  • A whisk

Method

Combine one part instant coffee, two parts sugar, and one part hot water in a mixing bowl. I used a milk frothing jug.

Whisk for a few minutes until you reach a thick, creamy consistency. When you dip the whisk into the mixture it should form peaks that last for a few seconds at least. If you want a thicker consistency, whisk for longer.

Add a few ice cubes to a glass and pour milk over them. We used our Bodum Pavina Double Walled glasses.

Spoon the whipped coffee onto the milk.

Enjoy as served, or stir to combine!
